Early Life & Family

Jorge Vallejo studied management and culinary arts before working on cruise ships and later in leading restaurants including Noma and Pujol. Alejandra Flores holds a master’s degree in hospitality management from the Les Roches school in Switzerland and previously worked as operations and commercial director for the Enrique Olvera Group. The couple opened Quintonil together in 2012.
