Bryant enjoyed a successful college football career at Florida Atlantic University, where he played for the Owls. During his time at FAU, he emerged as one of the top tight ends in the country. In 2019, Bryant was awarded the John Mackey Award, given annually to the top collegiate tight end in the nation. His outstanding performance on the field caught the attention of NFL scouts, leading to his selection by the Cleveland Browns in the fourth round of the 2020 NFL Draft.
